It’s salsa time! The weather is warming up as fast as the grill is and we’re going to need many cool, refreshing side dishes to go with our grilled meats over the coming spring and summer months. So here’s one to get started. It’s quick, healthy and packed with flavor. Can’t go wrong with that.
- 1 20 oz. can or about 2 cups Pineapple Chunks
- 1 Lime
- 1 Avocado
- 2 bunches of Scallions
- 3 tbsp fresh Cilantro
- 1 Red Bell Pepper
- 1 Jalapeño
Here’s what I did:
If using canned pineapple, drain the chunks, reserving the juice for a cocktail (vodka & pineapple works well). Chop the scallions (white and green parts), red pepper and jalapeño. Add the vegetables to a serving bowl with the pineapple. Top with chopped cilantro and avocado.
Season with a pinch or two of salt, then add the juice of one lime. Gently toss. Allow the flavors to meld together in the refrigerator until you are ready to serve.
Serve with chips as an appetizer or on top of spicy grilled chicken or shrimp. This is also good with fish tacos.
