Summer means eating outside, getting fresh produce from your local farmer’s market and sharing a meal with friends and family. Here’s a perfect side dish that comes together in minutes and feeds a crowd.
- 2 ripe Tomatoes
- 4-5 ears Corn (or 2 cans)
- 1 Lime
- 2 Poblano or Jalapeno Peppers
- 1/4 c. EVOO
- Salt & Pepper (which doesn’t count, because everyone has this in their kitchen)
Here’s what I did:
If you’re using corn from the can, just rinse and drain the corn and add to a medium-sized serving bowl. If you’re using fresh corn, cut all the kernels off the cob into a medium-sized pot. Boil the corn with salt and about one cup of water until tender. Then add to the serving bowl.
Roughly chop the tomatoes, discarding the middles. Finely chop the hot peppers. Add both to the corn and mix together with 1/4 cup olive oil and the juice of one lime.
Season with salt and pepper to taste. Allow the flavors to marry and serve at room temperature or cold.
