Simple Sides: Sautéed Chard

We received beautiful chard from our CSA and I decided to quickly sauté it as a side dish for  lunch.  It’s nutritious and delicious, always a winning combination.

Ingredients:

  • 1 bunch Chard
  • 1 Lemon
  • Parmesan
  • EVOO
  • Salt & Pepper

Here’s what I did:

After you wash and dry the chard, trim and discard the beautiful, colorful stems.  This includes de-stemming all the way up the center of the leaf.

Next, roughly chop the chard.  Heat olive oil in a medium-sized pan.  Mince the garlic and add it to the heated oil on the stove.  After the garlic sits alone in the pan for a minute or two, add the chard.  Stir continuously until the chard wilts.

When the chard is cooked through, add the zest and juice of one lemon.  Season with salt and pepper.  Plate topped with shavings of fresh parmesan.
