Cucumber Salad with Feta & Red Onion

This is a quick, easy cucumber salad that is great as a snack or as a side dish for a larger meal. The sour lemon and salty feta combine perfectly with the bite of the red onion and the low-calorie, yet very filling, cucumber.  I enjoy this dish when I want to munch while watching TV or reading a book, particularly because it’s healthy but mostly because it tastes great.

Ingredients:

  • 1 Cucumber
  • 3 tbsp Red Onion
  • 3 tbsp Feta
  • 1 Lemon
  • Kosher Salt

Here’s what I did:

Peel the cucumber (or leave some of the skin on – your choice!), then cut into thin slices.  Finely chop the red onion.  Combine the cucumber, red onion, feta cheese, kosher salt and the juice of half a lemon in a serving bowl.  Mix gently.  Serve with additional lemon wedges.
