Lemon-Pepper Chicken Kebabs


I have no shortage of lemon chicken recipes, clearly.  This is a quick and easy one that goes right on the grill, which means no cleanup.


  • Boneless, Skinless Chicken Breast
  • 1 Lemon
  • 1/4 cup EVOO
  • Kosher Salt & Fresh-Cracked Pepper

Here’s what I did:

Cut the chicken into bite-sized pieces and put into a resealable plastic bag.  Add the zest and juice of one lemon plus the olive oil to the bag, tossing well.  Marinate for at least 30 minutes but up to four hours.  About half an hour before you are ready to grill, season liberally with salt and pepper.


Thread the chicken pieces onto skewers. Put on the grill and watch carefully to be sure not to overcook.  No one likes dry chicken!  When you are ready to serve, season again with salt and pepper to taste.

Serve on the skewers or in a bowl garnished with parsley and lemon wedges.


A few notes, FYI:

Don’t forget – if you are using wooden skewers you need to soak them in water for at least 20 minutes to avoid fire flare-ups on the grill.  I use metal skewers to eliminate that step.  Plus, they are reusable, so I always have them on hand!
